javascript - express está indefinido al intentar simular con jest

Estoy intentando simular Express usando Jest en un proyecto de TypeScript. He probado muchas formas de hacer esto utilizando soluciones que he visto aquí y Express o aparece como indefinido o no es una función. Apenas estoy empezando con Jest y las pruebas en general.

Aquí está la prueba,

import { Server } from '../app/index'
import { AppRouter } from '../app/AppRouter'

jest.mock('../app/AppRouter')

//mock express
const expressMock = {
  use: jest.fn()
}

jest.mock('express', () => () => expressMock)

//mock decorators
jest.mock('../app/controllers/RootController', () => jest.fn())
jest.mock('../app/controllers/LoginController', () => jest.fn())
jest.mock('../app/controllers/decorators/controller', () => jest.fn())

describe('Server test suite', () => {
  test('should create server on port 3000', () => {
    new Server().startServer()
    console.log('test ran')
  })
})

aquí está el código que estoy probando,

import express from 'express'
import bodyParser from 'body-parser'
import cookieSession from 'cookie-session'
import { AppRouter } from './AppRouter'

import './controllers/LoginController'
import './controllers/RootController'

export class Server {
  private app: express.Express = express()

  public startServer() {
    console.log('Express is:', express())
    this.app.use(bodyParser.urlencoded({ extended: true }))
    this.app.use(cookieSession({ keys: ['alsdfsdf'] }))
    this.app.use(AppRouter.getInstance())

    this.app.listen(3000, () => {
      console.log('Listening on port 3000')
    })
  }
}

new Server().startServer()

El uso de la variable expressMock puede resultar en express() === undefined porque se define después de que se importa el módulo simulado, esto se explica en la documentación.

Debería definirse de la siguiente manera:

jest.mock('express', () => {
  return jest.fn().mockReturnValue({
    use: jest.fn().mockReturnThis()
  })
})
